Compositor, tecladista, arreglista y productor, Grillo ha destacado por su trabajo colaborativo y su composición politonal acústica y electrónica. Ha grabado para teatro, cine, televisión y arte digital. Se graduó como psicólogo de la Universidad de las Americas en CDMX y estudió composición en el City College de Nueva York. Fundó los ensambles La Supercopa, Turbochocolate y co-fundó Vórtice Ensamble. Compuso el himno oficial de Los Venados de Mazatlán y es pionero de la música para token no fungibles en blockchains.
